On a long journey, what can be done to prevent fatigue symptoms from appearing?

Take sufficiently long breaks.

If you are tired or sleepy, the best thing is to stop and rest in a suitable place and sleep for as long as you need (20-30 minutes are usually sufficient). A good way to recover from fatigue is to stop and take a short walk to get some air and stretch your legs. Rest for at least 20-30 minutes every 2 hours or every 200 kilometres at most.
